Ingredients

Scale

Bowl Base

  • 2 cups uncooked rice
  • 2 small heads broccoli, chopped
  • 3 large chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon oregano

Sticky Sauce

  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tablespoons sriracha
  • 2 teaspoons sesame oil
  • 1 teaspoon ground ginger
  • 2 teaspoons arrowroot powder mixed with 2 tablespoons water to make a slurry; cornstarch may be substituted

Spicy Mayo

  • ½ cup mayonnaise
  • 1 tablespoon sriracha
  • 2 to 3 tablespoons water

Topping

  • Sesame seeds, to taste
  • Avocado, to taste

Instructions

  1. Cook the rice: Prepare the rice according to the package directions.
  2. Steam the broccoli: Steam the chopped broccoli until fork tender, then set it aside.
  3. Season the chicken: Cut the chicken into small pieces and toss with olive oil, salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  4. Air fry the chicken: Preheat the air fryer to 400°F. Arrange the chicken in a single layer and cook for about 12 mins, until it reaches 165°F internally.
  5. Make the sticky sauce: Combine soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ground ginger in a saucepan. Bring to a boil, stir in the arrowroot slurry, and boil for 4 to 5 mins until thick and glossy.
  6. Assemble the bowls: Divide rice, broccoli, and chicken among five bowls. Spoon the sticky sauce over the chicken, whisk the spicy mayo ingredients together and drizzle on top. Finish with sesame seeds and avocado.

Notes

  • Use cornstarch instead of arrowroot powder if needed.
  • Store the components separately in airtight containers in the refrigerator for 3 to 4 days, then reheat until steaming hot.
