Pineapple Chicken Stir Fry is a sweet and savory skillet dinner with golden chicken, juicy pineapple chunks, bell pepper, onion, garlic, ginger, and a glossy pineapple soy sauce. It is quick enough for a homemade takeout night and tastes best served over rice, noodles, or crisp cabbage.

Chicken

  • 1 ½ lbs boneless skinless chicken breasts, or thighs
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch
  • 3 tablespoons peanut oil, or avocado oil or olive oil

Stir Fry

  • 1 20 oz can pineapple chunks, juices reserved
  • ½ yellow onion, cut into 1 inch pieces
  • 1 red bell pepper, cut into 1 inch pieces
  • 3 green onions, sliced

Sauce

  • ¾ cup pineapple juice
  • ¾ cup chicken broth
  • ¼ cup soy sauce
  • 2 tablespoons ketchup
  • 2 ½ tablespoons honey
  • 1 ½ tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon freshly grated ginger, or ¼ teaspoon ground ginger
  • 2 tablespoons cornstarch

Instructions

  1. Drain the pineapple: Drain the pineapple chunks and reserve ¾ cup pineapple juice for the sauce. Set the pineapple chunks aside.
  2. Make the sauce: Whisk the pineapple juice, chicken broth, soy sauce, ketchup, honey, rice vinegar, garlic, ginger, and cornstarch in a bowl until smooth.
  3. Coat the chicken: Cut the chicken into 1 inch pieces, pat dry, and season with salt and pepper. Toss with 2 tablespoons cornstarch until lightly coated.
  4. Sear the chicken: Heat peanut oil in a large skillet over medium high heat. Cook the chicken in batches for 2 to 3 mins per side, until golden and cooked through, then transfer to a plate.
  5. Cook the pineapple and vegetables: Add the pineapple chunks to the skillet and cook for 2 to 3 mins, until lightly browned. Add the onion and red bell pepper and cook for 4 to 5 mins, until crisp tender.
  6. Thicken the sauce: Pour the sauce into the skillet and bring it to a boil, stirring as it thickens and turns glossy.
  7. Finish the stir fry: Return the chicken to the skillet and toss until coated in sauce and heated through, about 2 to 3 mins. Top with sliced green onions and serve warm.

Notes

  • Use chicken thighs if you want extra juicy pieces.
  • Stir the sauce again right before adding it to the skillet so the cornstarch does not settle at the bottom.
  • Do not crowd the chicken while searing, or it will steam instead of brown.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a skillet or microwave with a splash of broth or water if the sauce thickens.
