Hearty Sausage and Tortellini Soup combines Italian sausage, cheese tortellini, spinach, tomatoes, and herbs in a rich chicken broth. This cozy one pot dinner takes about 45 mins from start to finish and is especially good served hot with Parmesan and crusty bread.

  • 1 lb Italian sausage, mild or spicy
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can 28 oz diced tomatoes
  • 1 can 8 oz tomato sauce
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes, or to taste
  • 1 package 9 oz refrigerated cheese tortellini
  • 2 cups fresh spinach leaves
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving
  • Fresh basil leaves, optional for serving

Instructions

  1. Brown the sausage: Cook the Italian sausage in a large soup pot over medium high heat, breaking it into small pieces until browned and fully cooked. Transfer it to a plate, leaving the flavorful drippings in the pot.
  2. Cook the aromatics: Add the onion and garlic to the same pot and cook for 2 to 3 mins, until the onion becomes translucent and the garlic is fragrant.
  3. Build the broth: Stir in the diced tomatoes, tomato sauce, chicken broth, dried basil, oregano, and red pepper flakes. Season with salt and pepper.
  4. Simmer the soup: Bring the broth to a simmer and cook for 10 to 15 mins so the tomato, herbs, and aromatics have time to blend.
  5. Cook the tortellini: Add the refrigerated cheese tortellini and cook according to the package directions, usually about 7 to 9 mins, until tender.
  6. Finish the soup: Return the sausage to the pot and stir until heated through. Add the spinach and cook just until wilted, then serve with grated Parmesan and optional fresh basil.

Notes

  • Mild or spicy Italian sausage both work, so choose according to your preferred heat level.
  • Avoid overcooking the tortellini because the filled pasta can soften or split.
  • Refrigerate leftovers in an airtight container for 3 to 4 days.
  • Tortellini absorbs broth during storage, so add a splash of chicken broth when reheating.
