  • 110 g butter
  • 75 g semi sweet chocolate chips, 55 to 70% cocoa
  • 35 g unsweetened Dutch cocoa powder
  • 100 g granulated sugar
  • 150 g dark brown sugar
  • 3 large eggs, at room temperature
  • 55 g vegetable oil, such as canola
  • 1 ½ teaspoons vanilla extract
  • 75 g all purpose flour
  • 1 tablespoon cornstarch
  • ½ teaspoon salt

PECAN PIE TOPPING

  • 90 g dark brown sugar
  • 65 g light corn syrup, glucose syrup, honey, or agave
  • 110 g butter
  • 1 teaspoon vanilla extract
  • 150 g whole pecans
  • 1 teaspoon all purpose flour
  • 1 pinch salt

Instructions

  1. Prepare the pan: Heat the oven to 325°F. Line an 8 inch square pan with parchment paper.
  2. Brown the butter: Brown 110 g butter in a saucepan. Pour it over the chocolate chips and stir until melted, then mix in the cocoa powder.
  3. Mix the brownie batter: Add both sugars and whisk until combined. Add the eggs and mix on medium high for 2 minutes. Whisk in the oil and vanilla. Sift in the flour, cornstarch, and salt, then gently mix just until combined.
  4. Bake the brownie: Spread the batter evenly in the pan and bake for 30 minutes. Chop the pecans while it bakes.
  5. Make the topping: In a saucepan, melt the topping butter with the dark brown sugar, syrup, and vanilla over medium high heat. Stir in the chopped pecans, flour, and pinch of salt.
  6. Finish baking: Pour the pecan mixture over the brownie and spread it evenly. Bake for 20 minutes more.
  7. Cool and chill: Cool on a wire rack for 30 minutes, then refrigerate for about 1 hour before slicing.

Notes

  • Store covered in the refrigerator for 2 to 3 days. Let the brownies come to room temperature before serving for a softer topping. Honey or agave can replace the light corn syrup.
