Fresh Strawberry Cheesecake Bites are juicy strawberries filled with a creamy vanilla cheesecake mixture and finished with graham cracker crumbs. They’re no bake, easy to serve chilled, and just right for brunch trays, parties, showers, or a simple make ahead dessert.

  • 1 lb fresh strawberries, rinsed and patted dry
  • 8 oz cream cheese, at room temperature
  • 2 tablespoons sour cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup graham cracker crumbs

Instructions

  1. Beat the cream cheese: Add the softened cream cheese to a mixing bowl and beat with an electric mixer until smooth and creamy.
  2. Make the filling: Add the sour cream, powdered sugar, and vanilla extract. Beat until the mixture is thick, smooth, and fully combined.
  3. Hollow the strawberries: Use a small paring knife or strawberry huller to remove the tops and centers of the strawberries, keeping the sides sturdy enough to hold filling.
  4. Fill the berries: Spoon the cheesecake filling into a piping bag or zip top bag with one corner snipped. Pipe the filling into each strawberry until slightly mounded on top.
  5. Add the crumbs: Sprinkle graham cracker crumbs over the filled strawberries right before serving.
  6. Chill and serve: Refrigerate until ready to serve so the filling stays firm and the berries taste fresh.

Notes

  • For the smoothest filling, make sure the cream cheese is fully softened before mixing.
  • Pat the strawberries very dry after rinsing so the filling does not slide out.
  • For best texture, fill the strawberries within 5 hours of serving.
  • Store leftovers covered in the refrigerator and discard any that sit at room temperature for more than 2 hours.
