  • 1 ½ pounds chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 ¼ teaspoons garlic powder
  • 1 ¼ teaspoons cumin
  • 1 teaspoon brown sugar
  • 1 teaspoon oregano
  • 1 ½ teaspoons chili powder
  • 3 teaspoons paprika
  • 1 tablespoon tapioca starch
  • 3 bell peppers, any color, sliced
  • ½ large red onion, sliced
    For serving
  • 2 cups cilantro lime rice
  • 1 can black beans, drained and rinsed
  • 2 cups chopped lettuce
  • ½ cup pico de gallo
  • ½ cup chipotle aioli

Instructions

  1. Prepare the chicken: Pound the chicken breasts to about ¼ to ½ inch thick. Slice very large breasts lengthwise first if needed.
  2. Season thoroughly: Combine the salt, garlic powder, cumin, brown sugar, oregano, chili powder, paprika, and tapioca starch. Coat the chicken evenly with the seasoning mixture.
  3. Cook the chicken: Heat the olive oil in a large skillet. Cook the chicken for about 4 to 5 mins per side, until browned and the center reaches 165°F, then transfer to a plate and slice.
  4. Sauté the vegetables: Add the bell peppers and red onion to the same skillet. Cook for about 7 to 8 mins, stirring occasionally, until tender with golden edges.
  5. Combine everything: Return the sliced chicken to the skillet and toss with the peppers and onion for 1 to 2 mins, just until hot.
  6. Build the bowls: Divide the cilantro lime rice and lettuce among four bowls. Add black beans, chicken and vegetables, pico de gallo, and chipotle aioli, then serve.

Notes

Cornstarch can replace the tapioca starch if needed. For meal prep, refrigerate the cooked chicken, vegetables, rice, and beans separately from the lettuce, pico de gallo, and aioli so the fresh ingredients stay crisp.
