Creamy Olive Garden-style chicken gnocchi soup with tender chicken, pillowy gnocchi, carrots, and spinach in a modern white ceramic bowl on bright white marble.

Creamy Chicken Gnocchi Soup is a cozy Olive Garden inspired soup made with shredded chicken, tender potato gnocchi, vegetables, spinach, and a rich herb cream broth. Ready in about 30 mins, it’s an easy one pot dinner that’s especially good with warm bread or a crisp salad.

Ingredients

Scale
  • 4 tablespoons butter
  • 1 small yellow onion, diced
  • 1 cup sliced celery
  • 1 cup matchstick carrots
  • 6 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon rubbed sage
  • 1/4 cup all purpose flour
  • 4 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1 pound potato gnocchi
  • 2 cups shredded rotisserie chicken
  • 1 1/2 cups fresh spinach, chopped
  • 1 teaspoon balsamic vinegar
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

Instructions

  1. Cook the vegetables: Melt the butter in a large pot over medium heat. Add the onion, celery, carrots, and generous pinches of salt and pepper, then cook for about 8 mins, stirring occasionally.
  2. Add the aromatics: Stir in the garlic, Italian seasoning, sage, and another couple pinches of salt and pepper. Cook for 1 min, stirring frequently.
  3. Make the roux: Sprinkle in the flour and cook for 1 min, stirring constantly. Add about 1/4 to 1/2 cup chicken broth and scrape up any browned bits from the bottom of the pot.
  4. Build the broth: Stir in the remaining chicken broth and heavy cream. Increase the heat to medium high and bring the soup to a gentle simmer.
  5. Cook the gnocchi: Stir in the gnocchi and shredded chicken. Reduce the heat to medium low and simmer gently for 3 to 5 mins, until the gnocchi is tender with a slight chew.
  6. Finish the soup: Stir in the spinach and balsamic vinegar and cook just until the spinach wilts. Taste and add more salt and pepper as needed, then serve warm.

Notes

  • Avoid boiling the gnocchi aggressively because it can become overly soft and gummy.
  • Whole milk or half and half can replace the heavy cream, although the broth will be less rich.
  • Refrigerate leftovers in an airtight container for up to 3 to 4 days.
  • Reheat gently on the stove, adding a splash of chicken broth or cream if the gnocchi has absorbed too much liquid.
  • Freezing isn’t recommended because the creamy broth can separate and the gnocchi may become too soft.
