Creamy Buffalo Chicken and Bacon Skillet combines tender chicken breast, smoky bacon, cheddar, and tangy buffalo sauce in one quick, comforting dinner. Ready in 20 minutes, it’s easy to serve over cauliflower rice or alongside a crisp salad.

Ingredients

Scale
  • 12 ounces chicken breast, diced
  • 4 slices bacon, diced
  • 1 tablespoon ranch seasoning
  • 2 tablespoons butter
  • 4 tablespoons cream cheese
  • ½ cup almond milk, or milk of your choice
  • 1 cup shredded cheddar cheese, divided
  • ⅓ cup buffalo sauce

Instructions

  1. Brown the chicken and bacon. Heat a skillet over medium heat for about 1 minute. Add the chicken, bacon, and ranch seasoning. Cook until the bacon is golden and the chicken reaches 165°F.
  2. Drain the excess grease. Transfer the chicken and bacon to a colander, then set aside.
  3. Start the sauce. Reduce the heat to low. Add the butter, cream cheese, and almond milk to the skillet, whisking until smooth.
  4. Melt in the cheese. Stir in half the cheddar until melted. Raise the heat gradually until the sauce bubbles, then reduce to a simmer.
  5. Finish the skillet. Return the chicken and bacon to the pan and stir. Drizzle with buffalo sauce, top with the remaining cheddar, cover, and simmer for about 5 minutes. If your skillet is oven safe, broil for 1 to 2 minutes for a browned top.

Notes

  • Choose a buffalo sauce with a heat level you enjoy.
  • Refrigerate leftovers in a covered container for 3 to 4 days; reheat gently with a splash of milk if the sauce has thickened.
