Cheesy Ground Beef and Rice Casserole

Cheesy Ground Beef and Rice Casserole combines seasoned ground beef, tender cooked rice, creamy mushroom sauce, and plenty of melted cheddar. It takes 45 mins from start to finish and makes a hearty family dinner that’s especially handy for busy weeknights.

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can cream of mushroom soup, 10.5 ounces
  • ½ cup milk or beef broth
  • 2 cups shredded cheddar cheese, divided
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Chopped parsley, optional

Instructions

  1. Prepare the oven: Preheat the oven to 350°F and lightly grease a 9 by 13 inch baking dish.
  2. Brown the beef: Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is tender. Drain excess fat, add the garlic, and cook for about 30 seconds.
  3. Mix the sauce: Whisk together the cream of mushroom soup, milk or beef broth, paprika, salt, and pepper until smooth.
  4. Assemble the casserole: Add the cooked rice, beef mixture, half of the cheddar, and sauce to the prepared baking dish. Stir until evenly combined and spread into an even layer.
  5. Add the cheese: Sprinkle the remaining cheddar evenly over the casserole and cover the dish with foil.
  6. Bake the casserole: Bake for 20 mins, remove the foil, and bake for another 10 mins until the cheese is melted and the casserole is bubbling. Broil for about 2 mins if you want a more golden cheese topping.
