Buffalo Chicken Grilled Cheese Sandwich is a spicy, creamy, melty sandwich made with shredded chicken, Frank’s hot sauce, ranch, cream cheese, Muenster cheese, blue cheese, and buttery toasted bread. It is ready in 20 mins and makes a quick comfort lunch or easy dinner with extra ranch, blue cheese dressing, or buffalo sauce for dipping.

  • 8 slices sandwich bread
  • 2 cups cooked chicken breasts, shredded
  • 2 teaspoons minced garlic
  • ¼ teaspoon cayenne pepper, optional
  • 1 teaspoon ground black pepper
  • ½ teaspoon paprika
  • ½ cup Frank’s hot sauce
  • ½ cup ranch dressing, homemade or store bought
  • 4 ounces cream cheese, softened
  • 4 tablespoons butter, softened
  • 4 to 8 slices Muenster cheese
  • 4 tablespoons crumbled blue cheese

Instructions

  1. Mix the cream cheese spread: In a small bowl, combine softened cream cheese, crumbled blue cheese, paprika, black pepper, and cayenne pepper until mostly smooth and spreadable.
  2. Make the buffalo chicken: In a separate bowl, stir together shredded chicken, Frank’s hot sauce, ranch dressing, and minced garlic until the chicken is evenly coated.
  3. Butter the bread: Spread softened butter on one side of each slice of sandwich bread, then place the bread butter side down on your work surface.
  4. Build the sandwiches: Spread the cream cheese mixture onto 4 slices of bread. Spoon the buffalo chicken mixture over the cream cheese, then add 1 to 2 slices of Muenster cheese to the remaining 4 slices.
  5. Close and cook: Close the sandwiches with the buttered sides facing out. Cook in a large skillet over low heat for about 5 mins per side, until the bread is golden and crisp and the cheese is melted.
  6. Serve hot: Slice the sandwiches and serve right away with extra buffalo sauce, ranch, or blue cheese dressing for dipping.

Notes

  • Use rotisserie chicken to keep the prep fast.
  • Cook over low heat so the bread does not burn before the cheese melts.
  • Swap Muenster with Colby Jack, Monterey Jack, white cheddar, or mozzarella if needed.
  • Store leftovers wrapped in foil in the refrigerator for up to 2 days.
  • Reheat in a 350°F oven for 10 to 15 mins for the best texture.
