Buffalo Chicken Flatbread

Two buffalo chicken flatbreads with melted mozzarella, blue cheese dressing, and green onions on a white ceramic platter over white marble.

Buffalo Chicken Flatbread has crisp edges topped with cooked chicken, tangy buffalo sauce, melted mozzarella, and creamy blue cheese dressing. It’s ready in 30 minutes and makes an easy dinner or a shareable game day appetizer.

Ingredients

Scale
  • 2 flatbreads, about 14.5 ounces total or equivalent
  • 2 teaspoons light olive oil
  • ½ cup buffalo wing sauce, plus more if desired
  • 1½ cups diced cooked chicken, about ¾ pound
  • 1 cup shredded mozzarella cheese
  • ⅓ cup blue cheese dressing
  • ⅓ cup sliced green onions, about 3 green onions

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper and place the flatbreads on it. Brush the edges lightly with olive oil.
  2. Bake for 5 mins, until warm and just beginning to crisp.
  3. Spread buffalo sauce over both flatbreads. Top with diced chicken and mozzarella, then drizzle with blue cheese dressing.
  4. Bake for 12 to 15 mins, until the edges are lightly browned. For a more browned top, broil on high for the final 1 to 2 mins, watching closely.
  5. Remove from the oven and top with sliced green onions. Add extra buffalo sauce or blue cheese dressing if desired, then slice and serve warm.

Notes

  • Prebake the flatbreads before adding toppings to help keep the base crisp.
  • Refrigerate leftovers, covered, for up to 2 days. Reheat on a baking sheet at 350°F for 5 to 7 mins.
